目的了解2012年-2015年湛江市出口罗非鱼中微生物污染状况,为该类产品监管提供参考依据。方法采用GB 4789系列微生物检验方法,检测待出口罗非鱼中菌落总数、大肠菌群、沙门菌、单核细胞增生李斯特菌、副溶血性弧菌及霍乱弧菌,并对2012年-2015年微生物检验结果进行总结分析。结果共检验5 607份罗非鱼类产品,菌落总数污染量均<5×10~5cfu/g,不超标;大肠菌群超标率为2.70%;沙门菌、单核细胞增生李斯特菌、副溶血性弧菌和霍乱弧菌的检出率分别为0.20%、2.81%、0.80%和0.51%。结论湛江市出口罗非鱼类产品中存在不同程度的微生物污染,单核细胞增生李斯特菌的污染尤为严重,应该引起重视。
Objective To understand the status of microbial contamination in tilapia exported from Zhanjiang City from 2012 to 2015 and provide a reference for the regulation of such products. Methods The total number of colonies, coliforms, Salmonella, Listeria monocytogenes, Vibrio parahaemolyticus and Vibrio cholerae in tilapia to be exported were tested by GB 4789 series of microorganism test methods. Annual microbiological test results were analyzed. Results A total of 5 607 tilapia samples were tested, with the total number of colonies contaminated <5 × 10 ~ 5 cfu / g, not exceeding the standard. The over-standard rate of coliform bacteria was 2.70%. Salmonella, Listeria monocytogenes, The detection rates of V. hemolyticus and V. cholerae were 0.20%, 2.81%, 0.80% and 0.51% respectively. Conclusion There are different levels of microbial contamination in tilapia fish products exported from Zhanjiang City. The contamination of Listeria monocytogenes is particularly serious and should be taken seriously.
