提起银耳补汁变色的问题,大多数厂家为此感到很难解决,都想寻找一种较好的抗氧剂,来防止银耳补汁的变色。然而,却忽视了外界条件对银耳补汁色泽影响的因素。一次偶然的机会发现,银耳补汁对红色特别敏感。以后通过实验证实,银耳补汁的确对红色及其它的深色都比较敏感。实验取经过灭菌的热银耳补汁(冷后也可,但观察的时间要长些),在瓶外贴上红色或其他深色纸;另取数瓶贴上白纸,放在光线不太强的地方,10天后观察其结果,见下表。
