Although there are many methodologies for analyzing blood fatty acids. However, the sample size is small, it is difficult to evaluate the impact of age, gender and other factors and to provide normal reference values. This article analyzes the fatty acid profiles of healthy adults in Nanjing, and analyzes the effects of gender and age on blood fatty acid content. The research object is a healthy adult worker in a factory in Nanjing. Among them, there were 60 age groups of 20 to 29 years, 30 to 39 years, 40 to 49 years, and 50 to 59 years. Each age group consisted of 30 men and women. The elbow venous blood was collected and collected for serum preparation. The detection method used capillary gas chromatography and the instrument was HP6890 Series gas chromatograph. Fatty acid standards and related reagents are German company products. The determination of serum fatty acids was done mainly at the Institute of Clinical Chemistry at Ulm University in Germany. The results of test and analysis show that the main fatty acids in healthy adults are determined by their levels of free fatty acids: C18:1, C16:0, C18:2, C18:0, C20:4, C20:0, C22:6. , C14:0; total fatty acids can be ranked as follows: C18:2, C16:0, C18:1, C18:0, C20:4, C22 6, C20:0, C14:0. The ratio of free fatty acid to total fatty acid content is about 1:7; the ratio of saturated fatty acid to unsaturated fatty acid in free fatty acid is 1:1.5, and in total fatty acid is 1:1.9, indicating total fatty acid Unsaturated fatty acid content increased significantly. The content of total serum fatty acids in female healthy adults was significantly higher than that in males, except for C20:0 and C20:4, there were significant differences (P<0.05). However, there was no significant difference in free fatty acid between male and female healthy adults (P>0.05). Of the 8 free fatty acids in healthy adults, oleic acid (C18:1) increased with age, with the highest in the 50-59 age group and significant compared with other age groups (P<0.05).
