[目的]了解南充市各餐馆、食堂等单位食用油的质量,为卫生监督提供可靠的依据。[方法]依据GB/T5009.37-2003食用油卫生标准分析方法,抽取577份食用油(植物油、动物油)测定酸价、过氧化值、砷、铅、浸出油溶剂残留量、黄曲霉毒素B1、羰基价。[结果]577份食用油合格率79.7%,其中动物油合格率61.3%,植物油合格率91.2%,煎炸油合格率97.3%。[结论]学校食堂、小型餐馆食用油卫生质量存在较大问题,应加强食品卫生宣传和监督力度。
[Objective] To understand the quality of edible oil in various restaurants, canteens and other units in Nanchong City and provide a reliable basis for health supervision. [Method] According to the hygienic standard of GB / T5009.37-2003 edible oil, 577 samples of edible oil (vegetable oil, animal oil) were drawn to determine the acid value, peroxide value, arsenic, lead, , Carbonyl price. [Result] The qualified rate of 577 edible oil was 79.7%, of which the passing rate of animal oil was 61.3%, the passing rate of vegetable oil was 91.2% and the passing rate of frying oil was 97.3%. [Conclusion] The hygienic quality of edible oil in school canteens and small restaurants has big problems, and the propaganda and supervision of food hygienics should be strengthened.
