扬子江地处长江东入大海的开阔地带,此地虫藻麇集,为鱼群提供了丰盛的食饵,故而水产丰富鱼类不仅与肉类有差不多相同的蛋白质,而且质量较优;同时鱼类的脂肪含量很低,钙、磷、铁等物质含量丰富,是有益的健康食品;鱼头中含有十分丰富的卵磷脂,是人脑中神经递质乙酰胆碱的重要来源。尤其是河豚鱼、刀鱼、鲥鱼、鮰鱼每年相继从海洋进入长江产卵。当这些鱼游到镇江至江阴沿江一带的时候,它们最为肥美鲜嫩,加之当地厨师高超的烹调技艺,“四鱼”就成为这一带独具特色的时令佳品为人们赞美。
