红曲霉不仅可用来生产红曲色素和酿酒,还能产生降脂活性物质Monaconin K。红曲霉菌丝体氨基酸总量可达25.6%~38.1%,必须氨基酸为5.3%~8.3%,并且麦角甾醇含量也较高。红曲霉菌丝体及发酵滤液能抑制小鼠过度肥胖。开发利用红曲霉,具有重要的意义。
Monascus can be used not only to produce Monascus pigments and wines, but also to produce Monaconin K, a lipid lowering active substance. The total amount of amino acids of Monascus mycelia can reach 25.6% to 38.1%, the essential amino acids are 5.3% to 8.3%, and the ergosterol content is also high. Monascus mycelium and fermentation filtrate can inhibit excessive obesity in mice. It is of great significance to develop and use Monascus.
