《台湾蔬菜彩色图说》是台湾大学园艺系教授黄涵、洪立编写的蔬菜专著,精装,16开本,210页,刊载了130种蔬菜的彩照和说明文字。其排列次序,首先按食用部位分为根菜类、茎菜类、叶菜类、葱类、花菜类、果菜类、食用菌类、杂类等八大类;每一类蔬菜的先后次序,则以其在台湾所占的地位及所属科别予以考虑;每一种蔬菜的文字说明,则按别名、英名、学名、科名、原产地、植物性状、栽培环境、主要品种的次序,予以介绍。书后附有中名、英名和学名三种索引,方便查阅。书中收载彩照862张,反映蔬菜在田间的实际
