山核桃(Carya Cathayensis Sarg),为我国特产的重要干果和木本油料树种。据分析,其果核百粒重304—442.5克,出仁率43.7—49.2%,种仁含油率高达69.8—74.01%。其种仁还含蛋白质7—9%及丰富的维生素,可以作干果及加工各种糕点。其油脂含油酸75.86—79.25%,亚油酸14.18—16.29%,亚麻子酸1.80—1.91%。油的碘价高,酸价低,饱和脂肪酸及人体难以吸收的廿碳以上的脂肪酸含量甚微,是易消化和预防冠心病的优良植物油。
Hickory (Carya Cathayensis Sarg), an important fruit of our specialty and woody oil tree species. According to the analysis, the fruit kernel weight of 304-442.5 grams, kernel rate of 43.7-49.2%, seed kernel oil content as high as 69.8-74.01%. Its kernel also contains 7-9% protein and rich in vitamins, can be dried fruit and processing a variety of cakes. Its oil oleic acid 75.86-79.25%, linoleic acid 14.18-16.29%, linolenic acid 1.80-1.91%. High iodine value of oil, low acid value, saturated fatty acids and human body difficult to absorb the content of more than twenty carbon fatty acids is very easy to digest and prevent coronary heart disease, good vegetable oil.
