什么是追溯系统?有人也把它称为反向查询。根据欧盟委员会2002年178号令中的规定:在食品工业中,每一个企业必须对其生产、加工和销售过程中使用的原料、辅料及相关材料提供保证措施和数据,并确保其安全性和可追溯性。因此对于企业来说,一个无疏漏的追溯系统和专业的质量管理系统是至关重要的。据统计调查,每年全世界死于食物感染和食物中毒的人达上百万,而这些其实都是可以避免的。正是基于此目的,欧盟才大力推广强制性追溯系统的建立。
