黄瓜在贮藏过程中所要求的适宜温度在11~12℃之间。温度过高易引起黄衰,贮藏期限缩短,品质较差;温度过低则易遭受冷害而引起大量腐烂。要求相对湿度在85—90%,相对湿度过低黄瓜易失水,萎蔫,品质下降,自然损耗增加。在贮藏过程中,特别在简易贮藏的条件下,如何创造黄瓜所要求的适宜温度和空气相对湿度的场所是搞好黄瓜贮藏的首要条件。为了解决这个问题,我们在一九八三年进行的不同窖型结构、性能初步调查及小量贮藏试验的基础上,一九八四年在咸水沽镇跃华大队第三生产队做了水窖的结构、性能的观测及黄瓜贮藏中型试验。一、水窖结构及性能的观测
