[目的]了解南平市饮食行业餐具消毒效果,防止因餐具不洁导致疾病的发生,提高餐具消毒质量,保障广大消费者的身体健康。[方法]2004—2008年对南平市餐具采样,以GB14934-94《食(饮)具消毒卫生标准》检测和评价,并对资料进行统计分析。[结果]2004—2008年南平市1933家饮食行业餐具消毒合格率分别为77.0%、79.6%、89.5%、91.9%和92.4%。[结论]南平市餐具消毒效果较好,但仍应加大对餐具的卫生监督监测力度。
[Objective] To understand the disinfection effect of tableware in Nanping Food Industry, to prevent the occurrence of diseases caused by the dirty tableware, to improve the disinfection quality of tableware and to protect the health of consumers. [Method] Samples of tableware in Nanping City from 2004 to 2008 were tested and evaluated with GB14934-94 Sanitary Standard for Food and Beverage Disinfection, and the data were analyzed statistically. [Result] The qualified rate of tableware disinfection of 1933 catering industry in Nanping from 2004 to 2008 was 77.0%, 79.6%, 89.5%, 91.9% and 92.4% respectively. [Conclusion] The tableware disinfection in Nanping City is better, but the supervision and monitoring of tableware hygiene should be strengthened.
