据世界卫生组织估计,全世界胃癌年发病约为80万人,是发病率最高的恶性肿瘤。我国胃癌死亡率居各种恶性肿瘤的首位(23.03%),每年约有26万人死于胃癌。近年来各国学者研究的大量资料表明,胃癌与环境因素、饮食习惯、癌前病变及遗传等因素有密切关系。而这些因素绝大部分都是可以通过人们的努力得到改变,因此胃癌是可以预防的。 少吃或不吃腌菜 腌菜中含有大量的亚硝酸盐和二级胺,在胃内适宜酸度或细菌的作用下,能合成亚硝胺类化合物,是很强的致癌物质。所以食品要新鲜,提倡冰箱冷藏。 不吃或少吃烟熏和油煎食物 熏鱼和熏肉中含有大量的致癌物质,如3—4苯并芘和环芳烃。油炸、烘烤、烧焦食物和重复使用的高温食油中也含有此类致癌物质,应尽量少食用。 不吃霉变的食物 日常生活中常常会遇到发霉变质的食品,如发霉的花生、米和面食品等。霉变是由污染霉菌所引起,霉菌中有些是产毒真菌,如黄曲霉菌产
