目的了解株洲市各类食品中常见致病菌的污染水平及其变化趋势,确定危害因素的分布和可能来源,掌握我市食品安全状况,及时发现食品安全隐患;方法按照《湖南省食品安全风险监测实施细则》要求收集2011-2014年间食品致病菌监测数据进行分析;结果 2011-2014年监测的1121份样品中,检出食源性致病菌116株,总检出率为10.35%;其中定型包装、散装食品检出率分别为5.61%和13.08%;致病菌检出率最高的样品为第三季度采集的样品;在所监测的各类食品中,水产及其制品致病菌检出率最高,达30.4%,其次依次为饮用水16.8%、餐饮食品12.5%、婴幼儿食品10.2%、肉与肉制品9.8%等;样品来源于农贸市场的检出率最高,达3.7%,其次为饭店/酒店/小餐馆2.9%和商场/超市1.8%等;结论株洲市市民主要消费食品中存在食源性致病菌污染,应加强食品生产销售等环节的监测和监管,以控制食源性疾病的发生。
Objective To understand the pollution levels and trends of common pathogenic bacteria in various foodstuffs in Zhuzhou City, determine the distribution and possible sources of hazardous factors, master the food safety situation in our city, and find the hidden dangers of food safety in a timely manner. Methods According to Hunan Provincial Food Safety Risk Monitoring Implementation Rules "to collect foodborne pathogenic bacteria monitoring data during 2011-2014 analysis; Results Among the 1121 samples monitored in 2011-2014, 116 foodborne pathogens were detected with a total detection rate of 10.35%; Among them, the fixed packaging and bulk food detection rates were 5.61% and 13.08% respectively; the samples with the highest detection rate of pathogenic bacteria were the samples collected in the third quarter; among the various types of foodstuffs monitored, the pathogens of aquatic products and their products The highest detection rate was 30.4%, followed by drinking water 16.8%, catering food 12.5%, infant food 10.2%, meat and meat products 9.8%; samples from the farmers’ market the highest detection rate of 3.7% , Followed by 2.9% in hotels / restaurants / eateries and 1.8% in shopping malls / supermarkets; Conclusions There is food-borne pathogens contamination in major consumer foods in Zhuzhou City.
