豆腐以其营养丰富、物美价廉、老少咸宜而深受人们喜爱,两千多年来经久不衰,在我国人民的食品结构中,占有重要的位置。可谓中华民族典型的传统食品,所以豆腐又有“国菜”之誉。关于豆腐的创制,较为统一的看法是公元前二世纪由淮南王刘安所制。据史料《天禄识余》所载:“豆腐,淮南王刘安造,又名黎祁。”五代时期谢绰所著《拾遗录》
