乳品是以乳为主要原料,加工制成的液体或固体食品,富含蛋白质、氨基酸、维生素和钙,具有很高的营养价值,被誉为“最接近于完善的食品”。乳品业实质上是一个把现代工业、现代商业和现代农业紧密结合起来的行业,世界上发达国家的乳业已成为农业中的第一产业,产值占农业产值的20%-40%。法国乳业的产值甚至超过汽车工业。乳业作为高效的畜牧产业,世界各国都普遍重视其发展,我国也大力鼓励发展该产业,乳业已被列为国家重点扶持项目。应该说,中国乳业的发展任重道远,在中国乳业前进途中,尚有一系列问题需要引起我们的高度重视,笔者拟就其中的几个问题与理论界和企业界进行探讨。 一、消费市场的培育问题 目前我国牛奶人均占有量不到10公斤,世界平均水平是100公斤,欧美则达到了300公斤,我国与发达国家相比有着较大的
