气调贮藏能有效的保持果实的品质,延长货架期;但不适宜的气调贮藏极易对果实造成伤害,尤其是高CO2会诱导梨发生褐变,风味和品质随之下降。该文对梨果实贮藏过程中高CO2伤害症状、细胞内CaCO3积累、细胞膜伤害、多酚氧化酶催化的酚类物质氧化、重要生化物质代谢失调等机理以及气调贮藏研究进展等方面进行了综述,以期为改善梨贮藏品质,延长上架时间提供参考。
Atmospheric storage can effectively maintain the quality of fruits and prolong the shelf life. However, unsuitable atmosphere storage can easily cause damage to the fruits, especially high CO2 will induce the browning of pears, and the flavor and quality will decrease accordingly. In this paper, the mechanism of hypercogermous CO2 injury, accumulation of intracellular CaCO3, injury of cell membrane, oxidation of phenolic compounds catalyzed by polyphenol oxidase, metabolism disorders of important biochemical substances, and the research progress of modified atmosphere storage in pear fruit during storage were reviewed. In order to improve the quality of pear storage, to extend the shelf time for reference.
