目的了解湖南省永州市食品中食源性致病菌污染状况。方法依据国家食源性疾病监测网2011年度工作手册,进行沙门菌、单增李斯特菌、金黄色葡萄球菌、蜡样芽孢杆菌、志贺菌、大肠埃希菌O157、阪崎肠杆菌的检测。结果检测熟肉制品、蛋制品、速冻熟制米面制品、即食非发酵性豆制品、糕点及饼干、凉拌菜、鲜榨果蔬汁、米粉(盒饭、米线、凉皮)、婴幼儿食品共198份样品中检出致病菌20株,总检出率为10.10%;9类食品中致病菌阳性率最高的是速冻熟制米面制品,检出率为27.27%;熟肉制品、米粉、糕点、凉拌菜、鲜榨果蔬汁、婴幼儿食品的检出率依次为18.18%、18.18%、9.09%、9.09%、4.55%、4.55%。结论永州市食品已不同程度受到多种食源性致病菌污染,速冻熟制米面制品、熟肉制品、米粉为主要受污染食品,食品监督执法部门应重点监测这几类食品,减少和避免永州市食源性疾病的发生。
Objective To understand the foodborne pathogens contamination in food in Yongzhou, Hunan Province. Methods According to the 2011 National Foodborne Disease Surveillance Network Workbook, the detection of Salmonella, Listeria monocytogenes, Staphylococcus aureus, Bacillus cereus, Shigella, Escherichia coli O157 and Enterobacter sakazakii . Results A total of 198 samples of cooked meat products, egg products, frozen cooked rice products, instant non-fermented soybean products, cakes and biscuits, cold vegetables, fresh and vegetable juice, rice noodles (box lunch, rice noodle and cool skin) 20 strains of pathogens were detected, with a total detection rate of 10.10%. The highest positive rate of pathogenic bacteria in 9 kinds of foods was quick-frozen cooked rice products, the detection rate was 27.27%; cooked meat products, rice noodles, cakes, Salad dishes, fresh fruit and vegetable juices, infant food detection rates were 18.18%, 18.18%, 9.09%, 9.09%, 4.55%, 4.55%. Conclusion Food in Yongzhou City has been polluted by a variety of food-borne pathogens to varying degrees. Frozen cooked rice products, cooked meat products and rice noodles are the main contaminated foods. The food supervision and law enforcement agencies should focus on monitoring these types of food to reduce and avoid Yongzhou food-borne diseases.
