《肉类工业》由全国肉类工业科技情报中心站编辑、出版、全国发行。 本刊主要为肉类工业广大职工、科技人员、管理人员、总经理(厂长)和有关部门介绍和提供肉类工业科技、管理、加工技术等方面的情报资料,为肉类加工工业现代化提供服务。 本刊报道主要内容: 一、国内外肉类工业科技水平和发展动态。 二、肉类工业的企业管理和生产经营经验(含定点屠宰专栏)。 三、原料(猪、牛、羊、兔、禽)肉与肉制品的初级和深度加工(屠宰、分割肉、小包装、熟肉制品、低温肉制品、肠类制品)及新产品开发、肉类冷藏加工技术。
