营养特点与变态反应的关系问题日益受到重视。胃肠道在维持免疫自身稳定方面起着中心作用。有人建议使用机体免疫指标作为营养全价性的评价指标。营养不足是继发免疫缺陷的最常见原因之一,这时常有对某些变应原的敏感性增高。2.5~50%变态反应是由食物中所含变应原引起的。但食物的基本成分:蛋白质、脂质、碳水化合物、维生素和矿物质对变态反应强度有明显影响。营养影响变态反应的材料大致可分为两类:食物总量(能价)的影响和各食物成分的影响。
