为解决城市用地紧张的矛盾,近年来建造的专用食堂较多地采用了叠层建造的方式。而如何解决垂直运输功能问题,将构成叠层食堂设计的关键。文章对叠层食堂进行了广泛的调查研究。通过对各种食物的加工方式、供应要求、经营方式等多方面、相互制约条件的分析,提出一个分层布置方案,有效地解决垂直运输功能问题,并从专用楼梯与食梯的结合关系上提出了具体的建议,以供建筑设计人员和专业教学者参考。
In order to solve the contradiction of urban land tenure, the dedicated canteens built in recent years have adopted a stacked construction method. How to solve the problem of vertical transport will constitute the key to the design of a multi-storey canteen. The article has conducted extensive investigations on laminated canteens. Through the analysis of various food processing methods, supply requirements, business methods, and other constraints and mutual constraints, a layered layout plan is proposed to effectively solve the vertical transport function problem and combine the special staircase with the food ladder. Specific suggestions were made for reference by architectural designers and professional educators.
