The natural beta-carotene found in single-cell salinity-tolerant algae (D. bardawil), as found in many fruits and vegetables, contains about 50% all-trans-beta-carotene and the rest consists essentially of -cis-β-carotene and small amounts of other β-carotene isomers. The physicochemical properties of 9-cis-β-carotene are significantly different from all-trans-isomers, which may lead to higher absorption and persistence in animal tissues.
