牛蒡是近年流行于国内的一种蔬菜,因营养丰富又被称为牛鞭菜、东洋参。原产我国,公元920年传入日本,在日本培育出多个品种。20世纪80年代,我国由日本引种菜用牛蒡,我们生产的牛蒡大部分出口,少量进入国内市场。在日本牛蒡被认为是强身健体、防病治病的保健菜,可与人参媲美,被称作东洋参。它富含菊糖、多种维生素及矿物质,其中含胡萝卜素的量占蔬菜第二位,比胡萝卜还高280倍,蛋白质、钙含量为根茎类蔬菜之首,粗纤维含量高于各种蔬菜,故也被称为蔬菜之王。牛蒡植物纤
