Under certain conditions human skin pigmentation may be due to jaundice, but in some cases may be due to excessive consumption of carrots or other carotene-derived foods. High carotene sclera remains normal white color, which can be distinguished from jaundice. Due to religious diets and complete vegetarianism, some people eat carrots in large amounts up to 4 pounds (1.75 kg) per day. Pigmentation first appears in the palms and soles of the feet and may extend to the nasolabial fold.
