目的了解绵阳市食品中食源性致病菌的污染现状,预防食源性疾病事件发生,为食品安全监管和科学评估食品安全风险提供数据。方法 2015年在绵阳市采集6类309份食品,按照国家风险监测手册进行6种食源性致病菌检测。结果 6类309份样品中共分离出4种8株食源性致病菌,总检出率2.59%,检出致病菌的食品是凉面/凉粉、生冻海产品和三明治,检出致病菌有蜡样芽胞杆菌、金黄色葡萄球菌、副溶血性弧菌和单增李斯特菌。其中街头摊点(凉粉/凉面)致病菌检出率最高,为19.05%,蜡样芽胞杆菌检出率最高,为8.82%,散装食品致病菌检出率为3.33%。结论2015年绵阳市309份食品中致病菌总体检出率不高,街头摊点的凉粉/凉面应作为重点监管食品,蜡样芽胞杆菌、金黄色葡萄球菌、副溶血性弧菌和单增李斯特菌应作为重点监测致病菌,重视散装食品的监督管理。
Objective To understand the status quo of food-borne pathogens in food in Mianyang and to prevent occurrence of food-borne diseases so as to provide data for food safety regulation and scientific assessment of food safety risks. Methods Six kinds of 309 foodstuffs of 6 categories were collected in Mianyang city in 2015, and 6 foodborne pathogenic bacteria were tested according to the national risk monitoring manual. Results Four kinds of food-borne pathogens were isolated from 309 samples of 6 kinds of foodstuffs, with the total detection rate of 2.59%. The pathogens detected were cold noodles, cold jelly, raw seafood and sandwiches. Bacteria are Bacillus cereus, Staphylococcus aureus, Vibrio parahaemolyticus and Listeria monocytogenes. Including street stalls (jelly / cold noodles) the highest detection rate of pathogens, 19.05%, Bacillus cereus highest detection rate of 8.82%, bulk food pathogens detection rate of 3.33%. Conclusion The overall detection rate of 309 pathogenic bacteria in Mianyang City was not high in 2015. The street jelly / cold noodles should be regarded as the key regulatory food, Bacillus cereus, Staphylococcus aureus, Vibrio parahaemolyticus, Listeria should be the focus of monitoring pathogens, emphasis on the supervision and management of bulk food.
