听妈妈说,我从小就爱吃姥姥推的莜面窝窝。莜面是张家口坝上地区的特产粗粮,是由莜麦加工而成的面粉。它虽然表面上粗糙,颜色发暗,但营养价值相当高,营养成分是其他面粉的七倍以上呢。做莜面窝窝可是有讲究的。姥姥先在莜面中倒入滚烫的热水,做成烫面,趁着热乎劲儿揉成面团。揉面时力道要足,这样揉出来的面才筋道,推出来的窝窝才光滑漂亮。
