去年上海鱼市场与渔管处,有一段极严重之纠纷。渔管处谓鱼市场从事剥削,不顾国计民生;鱼市场指摘渔管处残害民营渔业。结果农林部左部长提出折衷办法,由农林部设立乾咸鱼产销委员会,收买渔管处过剩之鲜鱼,制成乾咸鱼,以廉价向内地推销,俾不影响上海鱼市场之价格。法良意美,卒以人事关系,未得实行。然中国鱼业,果无问题乎?制造干咸鱼果无必要乎?曰,否否不然。吾不顾过分探究此问题之复杂人事关系,盖言之徒令人痛心。自上次纠纷发生以后,吾即以制造化学者之立场,从事技术之研究,数月来遍览羣籍,乃以个人心得,草成是篇,藉供实际从事斯业者之参考。吾深信盐藏鱼类,终必成为食品工业之一重要
