目的与方法 :本文应用DNA合成抑制 (DSI)实验对居民家庭烹调油烟进行了致突变性研究。结果 :实验结果表明 ,不同浓度的烹调油烟凝聚物均可见到DNA合成抑制 ,具有明显的剂量—效应关系。结论 :实验证实 ,烹调油烟中存在着引发人体细胞DNA损伤的遗传毒性物质
PURPOSE AND METHODS: In this paper, mutagenicity of household cooking fume was studied by DNA synthesis inhibition (DSI). Results: The experimental results showed that the inhibition of DNA synthesis was observed in different concentrations of cooking oil fume condensate with obvious dose-effect relationship. Conclusion: Experiments confirmed that cooking fumes exist in the cause of DNA damage in human genotoxic substances
