通过灌水和氮、磷、钾肥料的不同处理对优质小麦籽粒产量、蛋白质组分和加工品质的调控效应进行研究。结果表明,水、氮合理配合有显著的增产作用。不同蛋白质组分对水肥的反应有一定差异,清蛋白对灌水处理反应敏感,对肥料处理反应迟钝;球蛋白对灌水和氮、磷处理反应敏感,对钾处理反应迟钝;醇溶蛋白对水和氮处理反应敏感;谷蛋白随施氮量增加而提高。增施氮肥可提高吸水率,减少灌水次数可显著提高沉降值,增施氮肥使湿面筋含量显著提高,形成时间和稳定时间随灌水次数减少而增加。试验中以全生育期灌2次水,配合高氮、磷、钾处理的产量和品质均表现优良。
Through the irrigation and nitrogen, phosphorus and potassium fertilizer treatment of different quality wheat grain yield, protein composition and processing quality control effect. The results showed that reasonable combination of water and nitrogen had significant stimulation effect. The response of different protein components to water and fertilizer were different. Albumin was sensitive to irrigation treatment and insensitive to fertilizer treatment. Globulin was sensitive to irrigation and nitrogen and phosphorus treatment, and was unresponsive to potassium treatment. The effects of gliadin on water and Nitrogen treatment was sensitive; glutelin increased with increasing nitrogen rate. Increasing nitrogen fertilizer can increase the water absorption rate, reduce the number of irrigation can significantly increase the sedimentation value, increased nitrogen fertilizer significantly increased the content of wet gluten, forming time and settling time increased with decreasing irrigation times. In the experiment, 2 times of water was irrigated during the whole growth period, and both yield and quality of high nitrogen, phosphorus and potassium treatments were excellent.
