目的通过一起深山偏远农村不明原因细菌性食物中毒的调查,了解食物中毒的原因,提出预防控制办法。方法对就餐者、患者、厨师及帮厨者、食品贮藏和加工过程进行调查,检验剩余食物、患者吐泻标本。结果本次食物中毒符合细菌性食物中毒,因未采到可疑中毒食物,不能确定直接原因,但可分析出造成食物中毒的间接原因是农村地区餐饮从业人员无资质、无卫生防病知识、观念,食品贮藏、加工无安全卫生保障。结论加强卫生监督与监测管理,严防类似食物中毒的发生。
Objective To investigate the causes of food poisoning by investigating the unexplained bacterial food poisoning in the remote rural areas of remote mountainous areas and to put forward the preventive and control measures. Methods Diners, patients, chefs and cooks, food storage and processing were investigated to detect the remaining food and patients’ diarrhea samples. Results The food poisoning was in line with bacterial food poisoning. The direct cause was not confirmed because no suspicious poisoned food was taken. However, indirect causes of food poisoning could be analyzed because the food and beverage practitioners in rural areas are not qualified and have no knowledge of disease prevention or disease prevention Food storage, processing without safety and health protection. Conclusion Strengthen health supervision and monitoring management and prevent occurrence of similar food poisoning.
