马铃薯含有多种氨基酸、维生素和微量元素等,其块茎还含有禾谷类粮食所没有的胡萝卜素和抗坏血酸。具有动脉硬化、润肠通便、和胃健脾及抗氧化等多种作用。近年来,随着农业产业结构的调整和人民生活水平的提高,以马铃薯为原料的新兴食品逐渐增多,本实验室根据卫生部保健食品安全性毒理学评价和检验方法[1-3]对马铃薯提取液进行了急性毒性、遗传毒性及90 d喂养试验,现将结果报道如下。
