对食用菌菌包微波灭菌条件进行试验研究,探讨了灭菌过程中微波功率、传输速度等技术条件对灭菌效果的影响,通过试验提出了合理的微波灭菌条件。结果表明,微波功率148 k W、传输速度260 r·min~(-1)、通过微波辐射(频率2 450 Hz)16 min、物料含水率为62%、p H 6.2是目前菌包微波灭菌的最佳条件。该条件使菌包微波灭菌技术实现低成本、低功耗、无污染、高效率的技术要求。
The microwave sterilization conditions of edible fungus packs were studied. The effects of microwave power, transmission speed and other technical conditions on the sterilization effect were discussed. The reasonable microwave sterilization conditions were proposed through experiments. The results showed that the microwave power was 148 k W and the transmission speed was 260 r · min -1. After microwave irradiation (frequency 2 450 Hz) for 16 min, the moisture content of the material was 62%. P H 6.2 was the current microwave sterilization The best conditions. This condition makes the microwave sterilization technology of packs to realize the technical requirements of low cost, low power consumption, no pollution and high efficiency.
