调味类入药的不少,食盐、酸醋、辣椒、芫荽、姜和紫苏等等,各有其防治疾病的功效。豆豉也不例外,不过不是咸豆豉,而是淡豆豉。它苦寒无毒,能解表清热、透疹解毒。调味的豆豉与药用的豆豉在外观上是相似的,区别仅在配盐与不配盐上。盐与豉是形影不离的,在古代,“盐”与“豉”时常连用。在汉代,教学童用的字书《急就篇》上就有“芫荑盐豉”。
