儿茶素(黄烷-3-醇)和黄酮醇糖苷,作为茶叶中主要的保健和药理成分,是茶叶中主要存在的茶多酚,也是红茶和绿茶茶汤中典型的苦涩味化合物。前期研究工作表明,酯型儿茶素的合成涉及一种UDP-葡萄糖:没食子酰-1-O-β-D-葡萄糖基转移酶(UGGT),其中没食子酸(GA)在UGGT作用下,接受糖供体UDP-葡萄糖的糖基团而转化成1-O-β-D-没食子酰葡萄糖(βG)。茶叶中黄酮醇-3-O-糖苷的形成依赖黄酮醇-3-O-糖基转移酶(F3GT)的催化。UGGT和F3GT均属于糖基转移酶中GT1家族,直接或间接
