  In this paper, an aroma-producing strain was isolated and puried from rotting water chestnut.Sensory Evaluation of strong degree of aroma and measuring colony diameter was carried out to determing culture conditions of carbon and nitrogen.The optimal conditions of strain E01 growing was as follows: peptone 20g, K2HPO4 1g, KCl 0.5g, MgSO4·7H2O 0.5g, FeSO4 0.01g, glucose 30g, bran 30g, water 1000 ml.two methods for extracting sweet smelling substance of E01 by Head-Space Liquid-Phase Microextraction (HSLM) and Solvent Extraction.GC-MS was used in the research.
