Probiotics are "Live micro-organisms which when administered in adequate amounts confer a health benefit on the host" (WHO 2002).Adding live micro-organisms to food presents a major technological challenge,but a benefit of non-viable organisms is presently not proven.What comprises "adequate amounts" has not yet been addressed in legislation,and may not be the same in all circumstances.Health benefits are difficult to demonstrate in the healthy population.
