  [Objective]In order to study the extraction of chitin and optimum conditions,using citric acid combined with protease demineralized shrimp shells and deproteinization.[Methods]By studying the amount of alkaline protease,reaction time,substrate concentration and temperature on the extraction of chitin,hydrolysis rate,protein content,ash content,calcium content of indicators to determine the quality of chitin.[Results]The optimum conditions for the extraction of chitin: enzyme dosage7000U/g,the reaction time of 7h,substrate concentration2.5g/100g,a temperature of 60 ℃.[Conclusion]Under these conditions,the hydrolysis of chitin was 78%,protein content 6.88%,ash content 2.03%,0.3% calcium content.
