As a natural antioxidant, resveratrol (Res) has been widely apphed to pharmaceutical manufacturing and food industries.The effects of Res, 1-MCP and DPA on quality and superficial scald of Starkrimson apples were studied in this paper.The results showed that all treatments significantly maintained the firmness, dramaticlly increased SSC, effectively decreased α-farnesene content and inhibited the rise of conjugated trienes, but there were no significant differences in treatments.
