  Jeotkal,salted and fermented seafood,is a famous Korean traditional side dish.To produce microbiologically safe Jeotkal,the effect of gamma irradiation for inactivating pathogens inoculated into squid Jeotkal was investigated.Commercially available Squid Jeotkal (8% salt content) was purchased,radiation-sterilized,and inoculated with the cocktail of each mixed Listeria monocytogenes (ATCC 19114,19115,and 19111),Staphylococcus aureus (ATCC 6538,25923,and 29212),and Vibrio parahaemolvticus (ATCC 17802,33844,and 27969) at 106-107 CFU/g level.
