目的了解泰州市高校周边食品摊贩经营现状以及从业人员对食品安全知识的认知水平,为食品摊贩监管提供科学依据。方法采用整群抽样法,从泰州市区6所高校中随机抽取3所,调查其周边所有食品摊贩食品安全认知情况和卫生行为,用SPSS 13.0软件对数据进行χ2检验等统计分析,P<0.05为差异有统计学意义。结果本研究共调查96家食品摊贩和196名从业人员,40.63%配备了洗手设施、设备,46.88%配有存放垃圾或废弃物的暂存容器,54.17%配有防蚊、防蝇、防雨、防晒设施,35.42%有食品原料采购索证、索票资料及采购记录,75.00%食品、食品原料储存不符合国家要求。64.80%的从业人员未接受过食品安全知识培训,食品安全知识评分合格率48.47%,从事的食品类别、年龄、文化程度、食品安全知识受训经历对评分结果有影响(χ2=6.4197、7.3724、10.4680、6.5558,P均<0.05)。结论泰州市应尽快完善规章制度,加大监管力度,加强从业人员食品安全知识培训和大学生宣传教育工作。 Objective To understand the current situation of food vendors in surrounding areas of colleges and universities in Taizhou and the cognition of practitioners on food safety knowledge so as to provide a scientific basis for the supervision of food vendors. Methods A cluster sampling method was used to randomly select 3 food safety schools from 6 colleges and universities in Taizhou. The food safety awareness and hygiene behaviors of all food vendors were investigated. SPSS13.0 software was used to analyze the data byχ2 test, P < 0.05 for the difference was statistically significant. Results In this study, 96 food vendors and 196 employees were investigated. 40.63% of them were equipped with hand washing facilities and equipment. 46.88% were equipped with temporary storage containers for trash or waste, 54.17% were equipped with anti-mosquito, anti-flies, rainproof , Sunscreen facilities, 35.42% of procurement of raw materials for food certificates, ticket information and procurement records, 75.00% of food, raw materials, food storage does not meet the national requirements. 64.80% of the employees did not receive food safety knowledge training, and the passing rate of food safety knowledge was 48.47%. The training experience of the food category, age, education level and food safety knowledge affected the scoring results (χ2 = 6.4197,7.3724,10.4680 , 6.5558, P <0.05). Conclusion Taizhou City should improve the rules and regulations as soon as possible, increase supervision and strengthen the training of employees in food safety knowledge and education of college students.
