通过高效液相色谱法和荧光分光光度法分别测定了莴笋茎和叶中烟酸含量及对羟基自由基的清除能力。结果表明,莴笋茎和叶烟酸含量分别为0.45mg/g和25.68mg/g,当提取液浓度为0.4mg/mL时,莴笋茎和叶对羟基自由基的清除率分别为10.56%和87.65%。
The content of nicotinic acid in the stems and leaves of lettuce and the scavenging ability of hydroxyl radicals were determined by HPLC and fluorescence spectrophotometry respectively. The results showed that the content of nicotinic acid in stem and leaf of lettuce was 0.45mg / g and 25.68mg / g, respectively. When the concentration of extract was 0.4mg / mL, the scavenging rates of hydroxyl radicals in stem and leaf of lettuce were 10.56% and 87.65 %.
