目的研究空气、温度、沙枣树胶对葡萄树伤流液抗氧化活性的影响,探究稳定葡萄树伤流液抗氧化活性方法。方法利用羟自由基检测方法和超氧自由基检测方法,体外检测葡萄树伤流液受空气、温度和沙枣树胶作用后抗氧化活性的变化。结果葡萄树伤流液在空气中,随时间其清除羟自由基(·OH)的能力减弱。通过加热处理后清除·OH能力的降低速率减慢,但不能彻底阻止其降低过程。沙枣树胶能增强葡萄树伤流液清除·OH和O-2·的能力及其稳定性。结论空气破坏葡萄树伤流液抗氧化性能,加热处理只能减慢空气的作用,但沙枣树胶具有保护葡萄树伤流液抗氧化活性并使其稳定化的功能。
Objective To study the effects of air, temperature and jujube tree gum on the antioxidant activity of grapevine wound fluid and explore the method of stabilizing the anti-oxidative activity of grapevine fluid. Methods Hydroxyl radical scavenging assay and superoxide radical scavenging assay were used to detect the changes of anti-oxidative activity of grapevine wound fluid in air, temperature and jujube gum. Results Vitis sativus lost its ability to scavenge hydroxyl radicals (· OH) in the air over time. Clearing after heat treatment reduces the rate of decrease in OH ability but does not completely prevent its reduction. Jujube gum can enhance the capacity and stability of grapevine injury fluid clearance · OH and O-2 ·. Conclusions Air destroys the anti-oxidative properties of grapevine liquid stream, heat treatment can only slow down the air effect, but jujube gum has the function of protecting the antioxidant activity of grapevine fluid and stabilizing it.
