随着我国社会经济的快速发展和人民物质生活水平的不断提高,人们的消费观念逐渐趋向于快速化,多样化,绿色化,对于生鲜冷冻食品的需求量也越来越大。食品鲜活、易腐的特性对流通中的保鲜处理提出了更高的要求。据有关部门统计,我国每年估计有上千万吨的水果腐烂变质或贬值处理,每年捕捞的鱼类也有40万吨左右烂掉,经济损失超过上千亿,其中有80%都是由于在配送过程中没有实施冷链处理而导致的,因此采取冷链配送对于提高企业效益和节约社会资源具有重要的意义。
