根据欧美市场的消费习惯,以及对鱼片消费的大量需求,专家认为,“无刺鱼”类(即除了一根主刺外,鱼片中无刺)是畅销全球的鱼类,其中包括鳜鱼、鲟鱼、罗非鱼等。鳜鱼被称为淡水鱼极品。目前,其市场价为每公斤60～80元,我国现在年产量仅为8.9万吨,无力满足市场需求。
