目的:了解舟山市场上牡蛎中创伤弧菌污染状况,为预防创伤弧菌引起的食源性疾病做好预警,并对食用牡蛎的安全性评估提供科学依据。方法:从2007年7月至2008年6月分四次先后分别在舟山定海西码头和嵊泗县定海南珍菜场等农贸市场共采集40份牡蛎样本,经碱性蛋白胨水增菌,选择性培养基筛选培养,并通过生化鉴定、核酸检测进行定量检测分析。结果:在22份牡蛎样本中检出创伤弧菌,阳性率为55%,平均MPN值和最高MPN值分别为686.72 MPN/g和4600 MPN/g。结论:舟山市售牡蛎中创伤弧菌的污染情况严重,需对牡蛎的食品安全进行风险性评估,预防因生食牡蛎而导致的食源性疾病的暴发。
Objective: To know the status of Vibrio vulnificus infection in oyster on Zhoushan market, to prevent foodborne diseases caused by Vibrio vulnificus and to provide a scientific basis for the safety evaluation of edible oysters. Methods: From July 2007 to June 2008, 40 samples of oyster were collected from four markets respectively in Dinghai West Terminal of Zhoushan and Dinghai Zhenzhen Market in Shengsi County. The samples were enriched by alkaline peptone and selectively cultured Based on screening and culture, and through biochemical identification, nucleic acid detection quantitative detection analysis. Results: Vibrio vulnificus was detected in 22 samples of oyster. The positive rate was 55%. The average MPN and maximum MPN were 686.72 MPN / g and 4600 MPN / g, respectively. Conclusion: The pollution of Vibrio vulnificus in Zhoushan market is serious. Risk assessment of oyster food safety needs to be carried out to prevent outbreak of foodborne disease caused by raw oyster.
