Nitrosamines have a strong carcinogenic effect on animals’ esophagus. Its relationship with human esophageal cancer has attracted people’s attention. In some food and vegetables in Linxian County, a high-incidence area of esophageal cancer, nitrosamines were detected. The content and positive rate of nitrosamines were higher than those in low incidence areas. Nitrosamines are one of the causes of human esophageal cancer and there are great possibilities. Therefore, the search for drugs that inhibit the carcinogenic effects of nitrosamines will be of practical significance for the prevention of esophageal cancer. We followed the “prevention-based” health policy and conducted an experimental exploration of the inhibition of nitrosamine carcinogenesis. Has proved: cod liver oil,
