辐照和干燥对鲜香菇挥发成分的影响

分别采用剂量为0-5,1和2KGy的60Co对鲜香菇进行辐照,同时比较了γ-辐照和干燥对香菇挥发性成分的影响,挥发成分主要由GC和GC-质谱检测。结果显示,10KGy以上剂量辐照能延缓采收后鲜香菇的变质速度;20KGy剂量辐照增加了鲜香菇的八碳挥发组分; The fresh mushrooms were irradiated with 60Co at doses of 0-5, 1 and 2KGy, respectively. The effects of γ-irradiation and drying on the volatile components of Mushrooms were also compared. The volatile components were mainly detected by GC and GC-MS. The results showed that the radiation dose of 10KGy delayed the rate of metamorphosis of fresh shiitake mushrooms; the irradiation of 20KGy increased the eight-carbon volatile components of fresh shiitake mushrooms;
