湖北黄州的豆腐,自古出名。精于烹饪之道的北宋著名诗人苏东坡亲自操勺,创新豆腐菜肴。名品豆腐加上名人烹制,酷似猪肘,质嫩色艳,鲜香味醇,人称“东坡豆腐”。东坡豆腐以黄州豆腐为主料,将豆腐放入面粉、鸡蛋、盐等制成的糊中挂糊,再放入五成热的油锅里炸制后,捞出沥油;锅内放底油、笋片、香菇和调味料,最后放入沥过油的豆腐,煮至入味出锅即成。
