目的了解大连市食品中食品添加剂使用与残留情况。方法按照《2012年食品中化学污染物和有害因素监测工作手册》规定方法进行检测。结果 10份饮料中安赛蜜超标4份,超标率为40%;5份果冻中安赛蜜超标3份,超标率为60%;60份熟肉制品中,亚硝酸盐检出6份超标,超标率10%;5份海蜇制品中,4份铝残留量超标,超标率为80%;腐竹与银耳各1份二氧化硫超标;此外,2份非发酵豆制品检出苯甲酸,超标率为6.67%,属于超范围使用。结论市售饮料、果冻安赛蜜超标严重,熟肉制品与海蜇制品中亚硝酸盐、铝残留污染明显,需进一步加强监管,控制污染。

Conclusions Commercially available beverages and asepsin of jelly are over-standard and the residues of nitrite and aluminum residues in cooked meat products and jellyfish products are obviously polluted. Supervision and control of pollution should be further strengthened.
