本文研究了辽宁省12个有代表性的水稻品种在相同条件下的碾磨品质、外观品质和蒸煮品质,结果表明:辽宁省主要水稻品种整精米率、胶稠度、糊化温度等品质指标较优,而垩白粒率、垩白面积则较大;弯穗型品种与直穗型品种在糙米率、整精米率、直链淀粉含量、胶稠度、精米粒长、垩白粒率、垩白面积等7个指标上区别明显,弯穗型优于直穗型,相关分析表明:精米率与粒宽、整精米率与穗颈粗、胶稠度与着粒密度、粒长与理论产量呈显著负相关,而精米率与谷粒长宽比、胶稠度与穗颈长、垩白粒率与枝梗数、垩白面积与穗颈粗则呈显著正相关。
In this paper, the milling quality, appearance quality and cooking quality of 12 representative rice varieties in Liaoning Province under the same conditions were studied.
