香椿芽是我国传统蔬菜之一,香味浓郁、脆嫩鲜美、食用方便,蛋白质、多种维生素及磷、钙等元素含量较高。经常食用能降低血浆胆固醇中的饱和脂肪酸,预防高血压、冠心病和动脉硬化等病。目前医学界还用作抗肿瘤药物。据介绍,腌椿芽切碎和葱下面条或开水冲饮,能治伤风感冒。食用腌椿芽,对水土不服、腹痛呕吐也有特效。但因产量低、供应时间短,香椿芽成了蔬菜中的紧销品种,药用效能也难以发挥。
